Smoked Turkey Legs

Ingredients:

Smoked Turkey Legs

3 Each Publix Large Smoked Turkey Legs
8 cups Warm Water 
2 Tablespoon Knorr Chicken Bouillon
1 Bunch (2 oz) Fresh Cilantro Tied if Possible
2 Each Large White Onion Rough Chopped
4 Each Medium Carrots Rough Chopped
3 Each Celery Stalks Rough Chopped
4 Tablespoon Hickory Liquid Smoke
2 Teaspoon Fine Ground Black Pepper 
2 Tablespoon Pureed Fresh Garlic

Shrimp and Grits

2 Pounds Jumbo Shrimp (Peeled, Deveined, Tail-off)

Seasoning for Shrimp

2 Tablespoon Blackened Redfish Seasoning (Chef Paul Prudhomme)
2 Teaspoon Onion Granulated
1 Teaspoon Garlic Granulated
¼ Teaspoon Finely Grounded Black Pepper
1 Tablespoon Canola Oil

6 Ounces Red and Yellow Peppers Thinly Sliced
3 Ounces Green Onions Small Cuts
1 Tablespoon Garlic Puree 
4 Tablespoon Butter unsalted
2 Tablespoon All-Purpose Flour
1 Small Finely Chopped Onion
2 Tablespoon Redfish Seasoning
½ Cup Heavy Whipping Cream
Chicken Broth (2 teaspoon Bouillon to 2 cups of warm water)

Grits

1 Cup Quaker Quick 5 min Grits
3 Cups Water
1 Tablespoon Unsalted Butter
½ Cup Heavy Whipping Cream
¼ Teaspoon Garlic Puree
1 Teaspoon Salt
¼ Teaspoon Fine Ground Black Pepper

INSTRUCTIONS:

Smoked Turkey Leg

1 Large Baking Dish for all ingredients to fit in.
Put Turkey Legs in a Baking Dish and Add all ingredients except chicken Bouillon and Water.
Combine Warm Water and Chicken Bouillon and Mix until dissolved.
Pour above into one making sure Turkey Legs are Covered with Broth.
Cover with Foil and Cook for 2 ½ to 3 hours at 350 degrees.
Check for tenderness Meat Should Fall off the Bone.

Shrimp and Grits

Shrimp:

Mix 2 Tablespoon Blackened Redfish Seasoning (Chef Paul Prudhomme), 2 Teaspoon Onion Granulated, 1 Teaspoon Garlic Granulated, ¼ Teaspoon Finely Grounded Black Pepper, 1 Tablespoon Canola Oil, and blend all Ingredients together and set aside.

Add Butter on Medium Heat to Large Skillet, Add Garlic, Redfish Seasoning and Flour cook for 1 min. 
Add Chicken Broth and Whisk together then Add Cream let simmer on low heat for 2 mins.
Add Seasoned Shrimp Cover cook for 2 mins
Add Peppers and Green Onion Cook for 2 Mins uncovered while stirring occasionally 
Taste and adjust seasoning to your desire.

Grits:

Bring Water to Boil then turn down flame to medium heat.
Add all ingredients except Grits and Heavy Cream.
On Medium Heat Slowly Add Grits while Whisking.
Cook for 3 mins on low to medium heat slowly add heavy cream while whisking.
Taste and adjust seasoning if needed.
Place grits in a bowl and put shrimp in the middle.
