Jeannie’s KILLER Cauliflower Mash

Cauliflower Mashed Potatoes

Yields: 4 Servings

Ingredients:

Cauliflower
Garlic
Salt & Pepper
Heavy Whipping Cream
Parmesan Cheese
Scallions or chives
Olive oil

INSTRUCTIONS:

Cut cauliflower into florets and wash. Put in strainer and wash. Fill pot with 1/4 inch of water and put in steamer. Put the cauliflower in the pot to steam for 10 minutes.

Peel garlic cloves. Chop scallions or chives for garnish. In a separate, smaller pot, put in a generous serving of olive oil and add the garlic to cook until browned and caramelized.

Put the steamed cauliflower in food blender and blend until cauliflower is in smaller pieces. Start adding little bits of heavy whipping cream to make the cauliflower easier to blend. Add the garlic cooked in olive oil and blend until creamy. Add salt, pepper, and grated parmesan cheese and blend again.

Once blended into a mash consistency, put into a bowl and garnish with chopped scallions and leftover cooked garlic.
