One Pan Beef Stroganoff

Yields: 5-6 servings
Prep time: 15 minutes
Total time: 55 minutes

Ingredients:

2 3/4 cups beef stock

2 cups jarred Alfredo sauce

½ cup grated parmesan cheese

2 tbsp sour cream

8 ounces crimini mushrooms, thinly sliced

1-12 ounce package fully-cooked mini meatballs

1 pound Fusilli pasta

Grated parmesan for topping

DIRECTIONS:

Preheat oven to 425. Spray a 9x13 baking dish with cooking spray.

Add the beef stock, alfredo sauce, parmesan cheese, sour cream, salt and pepper. Whisk until fully combined. Add mushrooms and pasta and gently toss to coat pasta. Top with meatballs and more parmesan. Cover with aluminum. Bake for 30 to 40 minutes, until pasta is cooked. During cooking stir pasta 2 to 3 times. Keep covered the entire time of cooking or pasta on top with dry out. If pasta looks dry, then add another 1/4 cup stock.

Remove from oven, stir pasta before serving. Serve with more parmesan.
