Baby Back Ribs with quick BBQ sauce

Ingredients:

Baby Back Ribs

Ribs:
1 tbsp paprika
3 tsp kosher salt
2 tsp onion powder
2 tsp garlic powder
2 tsp cumin
1 tsp ground black pepper
2 rack baby back ribs

BBQ sauce:
1 cup ketchup
1 tbsp tomato paste,
1 tbsp brown sugar
1 tbsp dijon, spicy brown or yellow mustard
2 tsp vinegar, apple cider or white wine
1 tbsp reserved spice mixture for Ribs

Crispy Apple Cabbage Slaw

Slaw:
1⁄2 head green cabbage about 7 cups, shredded
2 stalks celery, washed and thinly sliced
1 green apple, cut into matchsticks
1 small white onion, cut in half moons thinly sliced

Dressing:
1⁄2 large lemon, juiced
2 tbsp mayonnaise
1 tbsp honey
1 tsp kosher salt
1⁄2 tsp ground black pepper

Berry Cake

Fruit topping:
1 pint fresh raspberries
1 pint blackberries
1 pint fresh blueberries
2 tbsp honey, more if needed
1 lime, zested and juiced


1 1/2 cups heavy whipping cream
2 tbsp honey
1 tsp vanilla
1 angel food cake or pound cake

INSTRUCTIONS:

BBQ Ribs:

Preheat oven to 275 degrees. Place ribs on a rimmed baking sheet tray.

In a small bowl, mix all spices together. Reserve a tbsp of the spice mixture and sprinkle the remaining spices on top of baby back ribs. Rub spices into the ribs. Cover until tray with foil, may need 2 pieces. Place in oven and cook for 2 1⁄2 to 3 hours. Meanwhile in a bowl add all the bbq sauce ingredients and stir together. Set aside. Remove ribs from oven and discard foil. Brush top of ribs with Bbq sauce.

For the grill, heat grill on medium high heat. Lightly grease with cooking spray, careful of the flare up from the flame. Place top of rib face down. Brush bottom with more bbq sauce. Heat for 2 minutes, flip ribs, brush top with more sauce. Close the grill and heat for another 3-5 minutes. Basting several times while they are on the grill. Remove ribs from grill to cutting board. Slice in-between ribs. Stack on a platter and drizzle with more bbq sauce.

For oven, Set oven to broil. Remove foil and brush rib generously with bbq sauce on both sides. Return to middle shelf in the oven and keep a close watch so not to burn them. Flip and broil for another 1-2 minutes. Flip again and brush with more BBQ sauce, baste with more bqq sauce several times. Remove ribs from grill to cutting board. Slice in-between ribs. Stack on a platter and drizzle with more bbq sauce.

Cabbage Slaw:

In a large bowl, whisk together the ingredients for the dressing. Add the cabbage, celery, apple and onion to the bowl. Toss until all is coated with the dressing. Taste for more seasoning. Store in an airtight container in the refrigerator.

Berry Cake:

Wash and dry all the berries. In a large bowl whisk honey, lime zest and juice together. Add in berries and let sit.
In a large bowl, add heavy cream. Whisk until soft peaks, add honey and vanilla and continue whisking until stiff peaks form. Set side.
To assemble: Dollop enough whip cream to cover the top angel food cake. Pour berries on top of whip cream. Serve immediately. Serve extra whip cream and berries on the side.
