Chipotle Bloody Mary Mayo

Makes 1 ½ cups
Prep Time: 5 minutes

Ingredients:

Breakfast Smashburger

1/2 stick unsalted butter, melted
1 tbsp worcestershire sauce
2 tsp fish sauce
1 pound ground beef 85%
Sliced cheddar cheese
Fried eggs
Cooked bacon
Brioche buns, buttered and toasted

Flavor on Flavor Turkey Burger

1 pound ground turkey, dark meat
1 egg
2 scallion, thinly sliced
2 tbsp fresh ginger, peeled and grated 
2 large garlic cloves, grated
¼ cup panko breadcrumb
3 tbsp soy sauce 
1 tbsp toasted sesame oil 
1 tsp kosher salt
½ tsp black pepper
3/4 cup honey 
1 cup toasted sesame seeds 
1/2 cup mayonnaise 
3 tablespoons Sriracha
4 hamburger buns, toasted

Chipotle Bloody Mary Mayo

1/2 cup olive oil
1/4 cup milk
1 tsp apple cider or distilled vinegar
1/2 tsp kosher salt
1tsp dijon mustard
1 tsp celery salt
1 tbsp ketchup
1 tsp worcestershire sauce
Few dashes of hot sauce
Pinch of pepper
Kosher salt

INSTRUCTIONS:

Breakfast Smashburger

In a med bowl whisk together butter, worcestershire, and fish sauce. In a large bowl, add ground beef, add 2 tbsp of the sauce and gently mix, continue adding more flavor until almost gone.

Divide into 8 equal balls. Roll and place on a plate and into the freezer for 15 minutes or frig for longer, until ready to cook. Meanwhile, fry eggs and toast the buns. Set aside.

Heat a cast iron skillet, until hot. Remove the beef from the refrigerator and form into a disc and sprinkle with salt and pepper. Place onto a cast iron skillet, allow to sear and form a crust, then using a flat spatula or back of a measuring cup, smash down. Push down hard, until can't smash anymore, about ¼ in thick. Cook for a few minutes, then flip. You may need to scrape up from the bottom when flipping. Get all those brown pieces. Flip and add cheese. Since these are very thin they will cook fast. When cheese is melted. Have toasted buns ready.Spread bun with sauce, top with one or 2 patties, egg and bacon finished with top bun.

Flavor on Flavor Turkey Burger

In a small bowl, whisk together the mayonnaise and Sriracha. Set aside

In a large bowl, add egg and whisk. Stir together in scallions, ginger, garlic, panko, soy sauce, sesame oil, salt and pepper. Add ground turkey and mix until fully combined. Divide into 4 patties and place on a sheet tray. Make a divot with your thumb in the center of each burger.

In a large non-stick skillet, add 2 tbsp oil, over medium-high heat. Cook the burgers 3-4 minutes on each side, until golden brown on both sides. Reduce the heat to low, drizzle and pour about 1 tbsp honey evenly  over all the top of each patty. Sprinkle the sesame seeds over, flip patties over and cook for another minute.

To build the burger, place sriracha mayo on the bottom bun, top with patty, cucumber slices and top bun

Chipotle Bloody Mary Mayo

In a mason jar, add oil, milk, vinegar, and mustard. Submerge an immersion blender into the jar all the way to the bottom. Turn on high speed and blend, while blending, move the immersion blender upwards to the top.

Add ketchup, celery salt, worchestire, hot sauce and pepper. Stir until fully mixed, taste for seasoning.

Store in refrigerator for 2 weeks in airtight container
