California Chicken Caesar Wrap

Death by chocolate Parfaits

Serves 6 to 8
Prep time: 25 minutes
Total time: 2 hrs and 25 minutes (with cooling)

Ingredients:

Ham and cheese pinwheels

3- 6in flour Tortillas
3 tbsp softened whipped cream cheese
3 tsp yellow mustard
1⁄2 # Sliced deli ham
1⁄2 cup shredded cheddar cheese

Crispy Apple Cabbage Slaw

4 pitas
1/3 cup extra virgin olive oil
1 tsp cumin
1 tsp kosher salt
1⁄2 tsp garlic powder
1⁄2 tsp pepper

Dressing:
1⁄2 lemon, juiced
1⁄2 tsp granulated sugar
1 tbsp dijon
1⁄2 tsp kosher salt
1⁄2 tsp ground pepper
1⁄2 ripe avocado
1⁄4 cup extra virgin olive oil
4 cups chopped romaine, washed and dried
2 cups shredded chicken or chopped fried chicken tenders
1 cup cooked rice, room temp
5 pita chips, chopped
2 tbsp grated parmesan
4 large burrito size tortillas

Pudding:

1⁄2 cup granulated sugar
1/4 cup cornstarch
1⁄4 cup cocoa powder
1⁄2 tsp kosher salt
2 cups cold mix
1 cup dark chocolate chips
Brownies or chocolate cake
2 chocolate covered toffee bars, like heath bars chopped
1 (16 ounce) package frozen whipped topping, thawed

INSTRUCTIONS:

Ham and Cheese Pinwheels

Spread 1 tbsp of cream cheese and 1 tsp mustard evenly over the entire tortilla . Top with 2 to 3 slices of turkey, sprinkle with cheese. Leave 1⁄2 in on the top of the tortilla free of any ham or cheese. Starting from the bottom roll up. When get to the top, use the 1⁄2 in of cream cheese to glue the tortilla closed. Place on a cutting board and slice into mini pinwheels. Place into a container and refrigerate until ready to serve.

Tips: these can be customized to suit anyone's needs. Add lettuce, or sundried tomatoes.

Place in the microwave or oven to melt the cheese. Easy to store and carry

California Chicken Caesar Wrap

In a large bowl, whisk together the lemon juice, sugar, mustard, salt and pepper. Add the avocado and mash until almost smooth. While pouring in the olive oil, whisk to incorporate the oil into the dressing.

Pita chips:
Preheat the oven to 425 degrees. In a small bowl whisk oil, cumin, salt and pepper. Place pita on cutting board and brush each side of the pitas with oil mixture. Stack on top of each other cut into triangles, should have about 8 triangles. Place in a single layer on a sheet tray and into the oven. Bake for 5-7 minutes until golden brown, remove from oven flip and bake for another 3-5 minutes. Remove and let cool completely

Dressing:

To the bowl add chopped romaine, rice , chicken, pita chips, and grated parmesan. Toss with the dressing until everything is coated. Place tortilla on cutting board, place a heaping cup full of salad on the mix of the tortilla. Fold in each side, then roll up from the bottom tucking the salad into the tortilla. Wrap in parchment paper and slice in half.

Tips:

Can use store bought pita chips. The pita chips give this wrap a crunchy texture. Sub the chicken for shrimp or steak.
Make this into a salad and leave out the tortilla
Using the avocado, makes this dressing creamy. Hence the name Avocado is very popular in california.
Pita chips are great to make when you have leftover pita or could use flour tortillas

Chocolate Parfait

In a med saucepan, add sugar, cornstarch, cocoa powder and salt. Turn on heat to medium high. Whisk in cold milk. Continue whisking until the mix has thickened, about 5 – 8 minutes. Turn off heat, add chocolate chips and whisk until melted and smooth. Pour into a bowl, cover with plastic wrap, making sure plastic touches pudding. Let cool completely in the refrigerator, about 2 hours.

To assemble: Crush/ crumble purchased brownies or cake into the bottom of the mason jar or cup. Top with 2 tbsp of pudding, sprinkle with chopped chocolate bar, then whip topping. Repeat with another layer.

Cover with lid and refrigerate until ready to eat.

Tip : Speed up the cooling process by spreading pudding on a small sheet tray and cover with plastic wrap.

Extra pudding, used to make pudding pops. Fill a small paper cup, add a popsicle stick and freeze.
