Spaghetti and Meatballs

Makes: 12-14 meatballs

Cheesy Garlic Bread

Serves 6-8

Ingredients:

Turkey Meatballs:
1 pound ground turkey
1 small onion, skin removed
1 small green bell pepper, washed
1 large egg
½ cup Italian bread crumbs
1 tsp garlic powder
1 tsp kosher salt
½ tsp ground black pepper
Olive oil
Kosher salt

Spaghetti:
1-16oz jarred tomato sauce
1 box of spaghetti
Grated parmesan cheese

Garlic Bread:
1 French Baguette
1 stick (4oz) unsalted butter
2 tsp garlic powder
1 tsp kosher salt
1 tsp dried parsley or oregano, optional
1/3 cup grated parmesan cheese
1 cup shredded mozzarella cheese

INSTRUCTIONS:

Spaghetti and Meatballs:

Preheat oven to 400 degrees.

Using a box grater, grate the onion and bell pepper into a large bowl. Hold the bell pepper by the stem and grate the bottom of the pepper, until you get to the top with the seeds. Add the rest of the ingredients and using your hands gently mix all together, until combined. Don’t over mix.

Drizzle oil onto sheet tray, using your hands spread all over. With an ice cream scooper, scoop turkey mixture onto sheet tray into balls. Roll into a round shape in the palm of your hands. If meatballs get too sticky, add some oil to your hands. Bake for 12-15 minutes and rotate pan half way thru cooking.

While meatballs are cooking, bring a stock pot ¾ filled with water to a boil. Add 1 tbsp salt to water. Cook per package directions.

Add sauce to a medium skillet on medium heat. Remove meatballs from oven and add to skillet with sauce. Simmer until sauce is heat through. Drain pasta, plate in bowls and top with warm sauce and meatballs. Sprinkle with cheese and serve.

Garlic Bread:

Preheat oven to 425 degrees.

In a small sauce pan, melt butter. Add garlic powder salt, parsley (if using) and parmesan cheese; stir until combined. Slice baguette along the on the top of the bread, slicing into the middle of the baguette, do not slice all the way through. Carefully open bread up a bit. Drizzle butter inside the cut bread and over the top. Sprinkle with the mozzarella cheese, making sure to get some inside the cut. Loosely wrap in foil, place on a sheet tray and into the oven for 15-18 minutes, until cheese is melted. Open foil and heat for another 5-7 minutes, until bread is golden brown and cheese is bubbly.

Remove to a cutting board, cut into 2 inch pieces and serve. Store any remaining garlic bread in airtight container in refrigerator and heat before serving.

Make garlic bread ahead of time, up until you bake it. Wrap in foil and place in refrigerator for 2-3 days or freeze for 1 month. Place straight into preheated oven and bake for a few extra minutes.
