One Pot Jerk Chicken and Rice

Ingredients:
Jerk seasoning:
2 tsp brown sugar
2 tsp kosher salt
2 tsp dried thyme
1 tsp onion powder
1 tsp allspice
1 tsp garlic powder
½ tsp black pepper
5- 6 Boneless skinless chicken thigh
4-6 tablespoons olive oil
1 ½ cups basmati rice
2 green bell pepper, small dice
1 large yellow onion, small dice
2 garlic cloves, minced
2 cups low sodium chicken broth
Salt and pepper
Parsley/ cilantro
INSTRUCTIONS:
In a large bowl, mix together all the ingredients for jerk seasonings. Add chicken and toss until fully covered. On medium high heat, add 2 tbsps of oil in a large cast iron or skillet with lid.
When hot add chicken and brown for 2 minutes, flip and cook for another minute. Remove to a plate. Repeat with more oil and remaining chicken. Add another 2 tbsps oil, onion, bell pepper and garlic, saute for 5 minutes until soft. Stir in rice, toast for 5 minutes, until rice has a golden brown color. Turn down heat to simmer. Add chicken stock and scrap up any bits on the bottom of the pan. Return the chicken to the pan and cover. Cook until all stock is absorbed and chicken is cooked, about 14-17 minutes. Remove lid fluff rice with with fork, top with parsley or cilantro. Season with salt and pepper if needed and serve.
Notes:
Chicken thighs are the easiest to cook. They stay moist and tender and a re great for one pot meals. I kept it easy for the family and these are boneless and skinless.
Jerk seasoning is so easy to make at home. It also brings an amazing flavor to this dish.
One pot meals, means easy clean up, getting dinner on the table fast and being able to spend more time with the family.
You can substitute other types of rice for the basmati, but cook time may vary. Basmati cook slighlty faster. Basmati is also very fragrant. It has a delicate flavor and is more aromatic.
