Tia’s Game Day Nachos

Sheet Tray Nachos with Dairy Free Cheese Sauce

Serves 4-6
Prep: 20 minutes
Total time: 35 minutes

Ingredients:

Taco seasoning:

1 tbsp onion powder
1 tbsp garlic powder
1 tbsp chili powder
1 tbsp kosher salt
2 tsp cumin
2 tsp ground black pepper

2 tbsp vegetable oil
1# ground turkey or beef
1-12 oz bag tortilla
1 can black beans, drained and rinsed

Nacho cheese sauce:

3 tbsp diary free butter, like Earth balance
3 tbsp all purpose flour
2 cups unsweetened almond milk, room temp
4 cups dairy free shredded cheddar cheese, like violife
1 tsp onion powder
1 tsp garlic powder
1 tsp paprika
1 tsp kosher salt

Chopped green onions
Sliced Jalapenos
Chopped cilantro
Guacamole
Pico de gallo

INSTRUCTIONS:

Preheat oven to 250 degrees.

In a bowl mix spices, salt and pepper together. Set aside. On medium high heat, in a skillet add 2 tbsp oil. When hot add turkey and brown until slighlty pink. Sprinkle with 2 tbsps of seasoning and continue cooking turkey until fully combined. Set aside. Save extra seasoning in airtight jar or resealable bag for several months.

Cover a sheet tray with foil, add tortilla chips, top with beans and cooked turkey. Place in oven while cooking cheese sauce.

On medium heat, in a sauce pan,  melt butter.  Whisk in flour and cook for 1 minute. Slowly add almond milk, while whisking. Bring mixture to a slow boil allowing it to slighlty thicken. Turn off heat, add cheese and whisk until smooth and all cheese is melted.  Add in onion powder, garlic powder, paprika and salt. Remove chips out of the oven, pour cheese sauce over chips, trying to get into all the nooks and crannys. 

Top with with green onions, cilantro, and jalapenos. Serve with a side of guacamole and pico de gallo. Serve immediately.


NOTES:

This is Seasoning is great to use for making tacos or chilis. Make it yourself helps you control the sugar and sodium, unlike those store bought premade packets.

Use heartier tortilla chips, nothing to thin or the chips will get soggy. I like to use the store brand for these nachos. They hold up really well.

Turkey is a great subsitute for beef in this dish. You could use any type of meat, even rotisserie chicken. 

Covering the pan entireely with foil, help reprevent a messy clean up. 

This sauce  can me made with dairy but substitute dary milk and cheese. It can be used for pastas, over steamed broccoli, or anything that could use some delicious cheese. 

Put on your favorite toppings or leave sauces on the side.
