Tia’s Zoodle Parmesan Bowls

Parmesan Bowls with Brown Butter Zoodles

Serves 2

Total time: 20 minutes

Ingredients:

3/4 cup shredded parmesan cheese, plus more for garnish
¼ tsp garlic powder
1/8 tsp black pepper
2 med or 1 large zucchini, washed
1 tbsp unsalted butter
2 garlic cloves, minced
¼ cup mint leaves or parsley, small chop
½ tsp kosher salt
¼ tsp black pepper

INSTRUCTIONS:

In a large skillet on medium high heat, sprinkle ½ of the cheese in a thin layer about 6 inch wide. Sprinkle with half of the garlic powder and pepper. Allow cheese to melt and become golden brown around the edges, about 2-3 minutes. Reshape the cheese in the skillet to a round shape by pushing around the edges with your spatula. Carefully slide spatula under cheese and flip over for another minute until golden brown. Place 4inch bowl upside down on work surface. Remove parmesan disc from skillet and drape on top of bowl. Using your spatula and hands push disc around the bottom of a bowl, it will be hot. As parmesan disc cools, it will harden and keep the “bowl” shape. Repeat with remaining cheese, garlic powder and pepper.

Cut both end of a zucchini off. Spiralize zucchini on the spaghetti size blade, can use a vegetable peeler for ribbons as well. Heat the same large skillet on medium heat. Add butter, melt until slightly brown. Toss in garlic and swirl pan to coat in the butter. Add in zucchini noodles, salt, pepper and toss noodles in butter for 1 -2 minutes. Stir in mint or parsley. Remove from heat.

To serve, Place parmesan bowl on a plate, add zoodles into bowl, top with more parmesan cheese.
