Ingredients:
Cheesy Egg Toast
2 slices sandwich bread
1 egg
Pinch kosher salt and pepper
Pinch garlic
2 tbsp sharp cheddar cheese
Large tomato, slices into ¼ inch slices
1 pinch dried oregano
Oatmeal Berry Bowl
1/2 cup quick rolled oats
1/2 cup boiling water
1 large frozen banana, sliced into chunks
1 ¼ cup frozen sliced strawberries
1 tablespoon sunbutter, peanut butter or almond butter
1-2 tbsp honey
Toppings:
Granola
Fresh berries
Drizzle of honey
Baked Sweet Toast
2 slices sandwich bread
1 large egg
1 tbsp oatmilk
Pinch cinnamon
2 tsp maple syrup
INSTRUCTIONS:
Cheesy Egg Toast
Preheat oven to 350 degrees. Spray sheet tray with cooking spray.
In a small bowl, whisk egg, cheese, salt, pepper, and oregano. Place bread slices on sheet tray, spoon egg mixture over bread, pushing the egg mixture all over the bread. Don’t pour all at once, you want the bread to soak up the egg mixture. Use all of the mixture and cover the entire piece of the bread. Top bread with a slice of tomato. Place in the oven for 10 -12 minutes, until egg is cooked and cheese is bubbling.
Remove to cutting board and cut into 3 pieces or sticks.
Oatmeal Berry Bowl
Boil water in a small sauce pan. Add to oats, stir and let sit for 1 minute. Pour into a food processor with remaining ingredients, except for toppings. Puree until smooth. Pour into bowls, top with favorite toppings and serve immediately.
Baked Sweet Toast
Preheat oven to 400 degrees. Spray sheet tray generous with cooking spray. In a small bowl or plate, whisk egg, oatmilk, cinnamon and maple syrup. Dip sliced bread into egg and coat both sides, place on the sheet tray. Bake for 8 to 10 minutes. Remove to cutting board, cut into 3 pieces. Pour syrup into a small bowl and stand sticks up right in the syrup.
